Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh cranberries
  • 2 tsp orange zest
  • Icing:
  • 1 cup powdered sugar
  • 1 tsp orange extract
  • 2-4 Tbsp milk

Instructions

  • 1. Preheat oven to 350 degrees F. Line a loaf pan with parchment paper or coat with non-stick baking spray.
  • 2. In a large bowl or the bowl of a stand mixer, combine flour, sugar, salt, and baking powder.
  • 3. Create a well in the center of the flour mixture and add wet ingredients. Mix until a lumpy batter forms. Fold in fruit.
  • 4. batter into the prepared pan and spread it out evenly. A rubber spatula works well for this.
  • 5. Bake for 35 to 40 minutes in the preheated oven. If a toothpick comes out clean, you know it’s done.
  • 6. Drizzle with the icing mixture. Cut into slices and enjoy!
