I’m always experimenting in the kitchen! This fruit bar recipe is perfect for that, why not try some of these suggestions?

Bar Variations:

  • If fresh blackberries aren’t an option for you, try using blackberry jam instead. You could also use frozen berries.
  • Substitute raspberries for the blackberries.
  • Add a layer of lemon curd or other fruit curd to the bars.
  • Try blackberry lemon cheesecake bars. Spread the cheesecake layer over the crust, then add the blackberry filling.
  • Make blackberry lime bars by replacing the lemon juice and zest with lime juice and zest.
  • Cook up the blackberry filling ingredients to make a yummy blackberry sauce for ice cream or pancakes.

Tips and Tricks:

  • You can mix the shortbread crust by hand with a pastry blender, using a food processor, or with an electric hand mixer.
  • If you are feeling extra fancy, you can add a dusting of powdered sugar to the top of the cooled bars. Just make sure they are completed cooled first, otherwise the sugar will just melt.
  • Any leftover bars can be stored at room temperature, in an airtight container, for up to 5 days.
