Green Tomato Relish

We love this relish on hot dogs and hamburgers, but you could add it to sandwiches or serve it as a condiment with meat as well.

If you are a canning newbie, this relish recipe is a great place to start. Be sure to check out my complete guide to canning at home for plenty of tips to help you on your way.

Ingredients

  • 8 green tomatoes, diced – Tart and refreshing, they add a nice kick that you can’t get from red tomatoes.
  • 8 apples, diced – Sweet and crisp, they balance the tanginess.
  • 4 yellow onions, diced – Savory and slightly sweet, they add depth and richness.
  • 2 green peppers, diced – Crunchy and vibrant, they add a fresh, slightly bitter bite.
  • 1 red pepper, diced – Sweet and colorful, it brightens up the dish.
  • 1 cup raisins – They provide a burst of flavor.
  • 4 cup white vinegar – Provides a tangy kick that cuts through the sweetness.
  • 2 tsp salt – Brings out all the flavors.
  • 3 1/2 cups sugar – Sweetens the mix and helps create that rich syrupy texture.
  • 1 tsp cloves – Adds a warm, spicy note.
  • 1 tsp cinnamon – Brings a sweet warmth that ties everything together.

Instructions

1. Chop all of the vegetables and fruit up.

2. Add all of the ingredients to a large pot and stir well.

3. Allow the mixture to come to a boil and simmer for 30 minutes.

4. Pour the relish into jars and process.

Recipe Notes

  • This recipe made a lot of relish, so next time I would probably half the ingredients.
  • I usually use half-pint jars when canning condiments. However, if you plan to gift them, quarter pints would work too.
  • Feel free to adjust the seasonings according to your tastes. You may enjoy adding mustard seed, celery seed, allspice, or red pepper flakes.
  • Try using apple cider vinegar instead of white vinegar.
  • If you prefer less chunks in your relish, use a food processor to dice the veggies. Take care not to blend them completely though.

Canning Tips

  • Make sure to release any air bubbles in the jars by running a clean spatula or a knife around the inside of the jar to release any trapped air.
  • Clean the rim of each jar thoroughly before processing to ensure a good seal. If a jar doesn’t seal properly, store it in the fridge and use it first.
  • Always label your jars with the date that they were processed and the contents.
