This salad is a fantastic starting point to creating any kind of caesar salad variation. We will often make this as is or dress it up with whatever else we might have in the fridge or pantry. It’s totally versatile!

Ingredients:

  • 2 heads romaine lettuce, chopped (about 3 cups)
  • 1/2 cup caesar salad dressing *
  • 1/2 cup croutons
  • 1/4 cup parmesan cheese, shredded
  • 1/4 cup bacon bits

* We use this homemade caesar salad dressing but your favorite store-bought brand will work too.

Directions:

  1. Chop up the fresh romaine lettuce.

Note: we like to buy the large bag of fresh romaine at Costco because we can get 2-3 salads out of it in a week.

2. Toss the lettuce in a large mixing bowl.

3. Add dressing, bacon and cheese.

4. Toss to combine.

This classic caesar is awesome as is – especially with our homemade dressing, that’s the key! But it’s also fun to dress it up with more toppings.

Substitutions & additions:

  • Add green onions, red onion or chives.
  • Make homemade croutons and add them to the salad.
  • Add black pepper, fresh herbs or a pinch of salt to taste.
  • Use kale, cabbage or brussels sprouts in addition to the romaine.
  • Make our homemade dressing with a combo of mayonnaise, worcestershire sauce, dijon mustard, anchovy paste and garlic cloves.
  • Top with crispy chickpeas, nutritional yeast or panko breadcrumbs for even more texture.
  • Add raisins, dried cranberries or chopped apples for a touch of sweetness.

Tips & Tricks:

  • Store salad in an airtight container or covered in plastic wrap in the fridge for a day. It will start to wilt fast so we try to make just enough for everyone rather than have leftovers.
  • This is best prepared separately from the dressing and then combined when ready to serve.
  • Not a fan of caesar dressing?  Try a mixture of olive oil, greek yogurt, vinegar and lemon zest instead.
