It is high in protein, a source of calcium, and it is also a good low-fat and low-calorie option, even if you choose a full fat variety.
Today I want to share a flatbread recipe with you that is made with cottage cheese. Unlike traditional flatbread, this high-protein cottage cheese flatbread fits easily into a low carb or gluten-free diet.
Cottage Cheese Flatbread
The recipe is also really adaptable. I can use this flatbread to make sandwiches, wraps, and even pizzas!
Add a drizzle of olive oil, a bit of fresh garlic, and some parmesan cheese before baking and I have delicious breadsticks. Depending on what I plan to use it for, I can adjust the base flavor of the flatbread with different seasonings. The sky is the limit.

Ingredients
- Cottage cheese – I like to use 4% when I can get my hands on it!
- Eggs – farm fresh is awesome!
- Everyday seasoning – this is my favorite seasoning from Trader Joes but salt & pepper works too.
Instructions
1. Preheat the oven to 350 degrees F.
2. Line a baking sheet with parchment paper.
3. Combine your ingredients in a blender or food processor.
4. Blend until smooth.
5. Pour the mixture evenly onto the lined cookie sheet and spread the batter out into a rectangular shape.
6. Bake in the oven for 30-35 minutes.
7. Allow the flatbread to cool completely before adding your favorite sandwich fillings.
8. Use the flatbread to form a wrap, cut in half, and serve.
Recipe Notes
Be sure to spread the cottage cheese mixture out in an even layer so that it cooks evenly, otherwise it may burn or become too crispy.
Use your favorite spices, such as Italian seasoning, garlic powder, onion powder, salt, and black pepper, etc.
This recipe can easily be halved for a single serving.
