Crockpot Hamburger Casserole Recipe
Today’s easy recipe for crockpot hamburger casserole is just the kind of “set it and forget it” meal that I look for. It is the perfect comfort food, loaded with pasta, meat, and cheese.
This recipe is a great alternative to boxed Hamburger Helper too. I know what each of the ingredients are and have full control over the amount of sodium I am feeding my family.
I like to add a caesar salad, broccoli or green beans and some garlic bread for a hearty meal that is perfect for the whole family.
Tips and tricks
- Adjust the spices and flavorings according to your family’s preferences. Try adding black pepper, Worcestershire sauce, onion powder, or Italian seasoning. You could even throwing in some ketchup or BBQ sauce.
- Any kind of cheese may work.
- Reserve some cheese for topping.
- If there is not enough broth to cover the pasta, add another 1/4 cup.
- I like to spray a bit of non-stick spray on the bottom of the slow cooker to make clean up easier.
- Store leftover casserole in an airtight container.
Ingredients
- Lean ground beef, cooked & drained
- Medium onion, diced
- Can cream of mushroom soup
- Beef broth, homemade or store bought
- Garlic powder & salt
- Macaroni noodles – any kind of pasta will work here.
- Cheddar cheese, shredded
- Sour cream, full fat or low fat
Instructions
1. In a large skillet, brown ground beef over medium heat.
2. Combine the browned ground beef, onion, mushroom soup, beef stock, and spices in a crockpot.
3. Stir to combine and set the slow cooker to high for 2 hours or low for 3-4 hours.
4. At the end of the set time, add macaroni noodles to the beef mixture, set to high and cook for another 30 minutes. Be sure that the noodles are all completely covered in broth.
5. Ten minutes before serving, add cheese and sour cream, stir and cover.
6. Serve with a side salad or vegetables.
Recipe Variations
- Substitute the beef with ground turkey or chicken, then use chicken broth and cream of chicken soup.
- Try stew meat instead of hamburger meat.
- Add extra fresh vegetables as desired! Sliced mushrooms and diced green pepper are good choices.
- Make a hamburger potato casserole by switching the noodles for sliced potatoes or hashbrowns.
