A traditional kale salad usually combines crisp kale, fruit, nuts and a vinegrette type dressing. This caesar salad twist is one of my favorite ways to dress up a kale salad!

This is the best caesar salad in my humble opinion because it has the perfect combination of crunchy texture and creamy dressing.  It’s like a flavor explosion in every bite!

This salad has replaced traditional caesar salad in all of my meal preparation because it’s also fairly healthy and low carb.  Omitting crunchy croutons means it’s keto friendly too.

We love that this crisp salad only needs a few simple ingredients from the grocery store! And it makes the perfect side dish for summer, great for pairing with smoked hot dogsBBQ burgers or grilled venison steaks.

Kale Caesar Salad Recipe:

Ingredients:

  • 2 cups fresh kale, chopped
  • 1.5 cups of romaine lettuce, chopped (about one head)
  • 1 cup red cabbage, sliced (1/4 of a small head of cabbage)
  • 1/2 cup ceasar salad dressing *
  • 1/4 cup fresh parmesan cheese, shredded
  • 1/4 cup crispy bacon bits (4 slices bacon cooked and chopped)
  • 1 Tbsp capers, drained
  • Lemon juice

* I love, love, love this homemade caesar salad dressing but your favorite store-bought brand will work too.

Directions:

  1. Chop up the vegetables.

​Tip: Peel the kale leaves from the kale stem before chopping it into bite-sized pieces.

2. Toss the lettuce, kale and cabbage in a large mixing bowl.

3. Add dressing, capers, bacon and cheese.

4. Toss to combine.

5. Add a squeeze of lemon juice. 

6. Top with extra parmesan cheese and serve.

Recipe Substitutions:

  • Curly kale, lacinato kale, baby kale or tuscan kale all work.
  • Add green onions, red onion or chives.
  • Make homemade croutons and add them to the salad.
  • Add black pepper, fresh herbs or a pinch of salt to taste.
  • Make our homemade dressing with a combo of mayonnaise, worcestershire sauce, dijon mustard, anchovy paste and garlic cloves.
  • Top with crispy chickpeas, nutritional yeast or panko breadcrumbs for even more texture.
  • Add raisins, dried cranberries or chopped apples for a touch of sweetness.

Tips & Tricks:

  • Store salad in an airtight container or covered in plastic wrap in the fridge for a day.
  • This is best prepared separately from the dressing and then combined when ready to serve.
  • Not a fan of caesar dressing?  Try a mixture of olive oil, greek yogurt, vinegar and lemon zest instead.

This is the perfect side dish for the warm summer months because it’s easy to prepare in advance and bring to an event. Just store the salad dressing separately until ready to serve.

Ingredients
