Supplies
- Sharp knife
- Cutting board
- Mandoline (optional)
- Wide mouth mason jars
- Jar lids
Ingredients
- Large English cucumber, cut into thin uniform slices – you can use a sharp knife and cutting board or a mandoline. I don’t like having too many kitchen gadgets so I don’t own a mandoline and have found that a sharp knife works just as well!
- Sea salt – I like to use pink Himalayan salt too.
- Soy sauce – coconut aminos work nicely as well.
- White vinegar – rice wine vinegar, red wine vinegar or apple cider vinegar work too.
- Olive oil or sesame oil.
- Minced garlic
- Chili oil – be sure to taste test and adjust for spice & heat.
- Stalks green onions, finely sliced
- Red onion, thinly sliced – pickled red onion would be nice too!
- Red pepper flakes – for added heat.
- Toasted sesame seeds
Instructions
1. Start by slicing the English cucumber evenly into thin uniform slices. Toss them in a large bowl with really cold water to keep them crisp.
2. Add the cucumber slices to a large mason jar along with the salt. Place the lid on and allow it to sit for a few minutes, then pour out any excess liquid.
3. Add in the soy sauce, rice wine vinegar, toasted sesame oil, minced garlic, chili oil, green onions, and red pepper flakes.
4. Seal with the lid, and shake well to coat everything evenly.
5. Top with sesame seeds and enjoy!
For the best results, refrigerate the jar for at least 10 minutes before serving. The cold temperature helps the flavors meld together beautifully.
Top with crumbled feta cheese if you like, and serve as a delicious side dish. This fresh cucumber salad is perfect for a hot day or alongside your favorite main dish.
