Tips for Baking Chicken

  • Use your favorite cut of chicken. Chicken thighs or legs both work great. You could even cook up a whole chicken. Just rub the oil and spices into the skin before putting it in the oven. Cooking time will vary depending on what cuts you are using.
  • Avocado oil is an alternative healthy fat that can be substituted for olive oil.
  • Use a meat mallet to tenderize and even out thickness for consistent cooking time.
  • Mix your chicken pieces and seasonings together in the morning before you head out for the day, cover the baking dish tightly with plastic wrap, and leave it in the fridge. All you have to do when you get home is pop it in the oven and let the chicken bake.
  • An Instant Pot or air fryer both work great to achieve really juicy chicken.

Tips and Tricks

  • If you like to do bulk meal prep ahead of time, just throw your whole chicken breasts into zip-top plastic freezer bags with your seasonings. Make sure you write the cooking time and temperature on the bag before you put it in the freezer! This easy recipe will keep for up to 9 months.
  • Substitute fresh garlic for the garlic powder.
  • Mix up your flavors! Try ranch dressing mix for a baked ranch chicken dinner. Or use taco seasoning or parmesan cheese for a new twist.
  • Use chicken tenderloins to make keto chicken tenders.
  • Use a meat thermometer to check the meat’s internal temperature and avoid overcookingโ€”nobody likes dry chicken.

My husband is prediabetic and is controlling it through a keto diet. I made this chicken last week, and he loved it – the chicken was very moist and versatile in a number of dishes. It will be a weekly prep staple in our house! Thank you!
