Tips for baking chicken:

  • Use your favourite cut of chicken. Chicken thighs or legs both work great. You could even cook up a whole chicken. Just rub the oil and spices into the skin before putting it in the oven. Cooking time will vary depending on what cuts you are using.
  • Avocado oil is an alternative healthy fat that can be substituted for olive oil.
  • Create an even thickness to your chicken with a meat tenderizer.
  • Mix your chicken pieces and seasonings together in the morning before you head out for the day, cover the baking dish tightly with plastic wrap, and leave it in the fridge. All you have to do when you get home is pop it in the oven and let the chicken bake.
  • An Instant Pot or air fryer both work great to achieve really juicy chicken.

Tips and tricks:

  • If you like to do bulk meal prep ahead of time, just throw your whole chicken breasts into zip-top plastic freezer bags with your seasonings. Make sure you write the cooking time and temperature on the bag before you put it in the freezer! This easy recipe will keep for up to ** months.
  • Substitute fresh garlic for the garlic powder.
  • Mix up your flavours! Try ranch dressing mix for a baked ranch chicken dinner. Or how about taco seasoning in place of Italian?
  • Use chicken tenderloins to make keto chicken tenders.

What to serve with baked chicken:

  • Serve with a side of cauliflower rice topped with marinara sauce and mozzarella cheese for an Italian meal that fits easily into your keto dinner plan.
  • Steamed green beans or other green vegetables.
  • A fresh spinach side salad would also be delicious.
  • Throw together a cheese sauce with chicken broth, cream cheese, and a splash of heavy cream. Season with black pepper and salt. Add some parmesan cheese for a parmesan cream sauce.

Hi. How much would you change the cooking time if using chicken tenders instead of full breasts?
