Loaded potato salad recipe:
Ingredients:
- 2 pounds white potatoes, cut into quarters
- 5 pieces of bacon, cooked and diced
- 1/2 cup mayonnaise
- 1/2 cup caesar salad dressing
- 1/2 cup (2 stalks) green onion, diced
- 1/4 cup cheddar cheese, shredded
- 3 Tbsp sour cream
- 1 Tbsp brown mustard
* This homemade caesar salad dressing is amazing but any store bought brand will do.
Directions:
1. Cut potatoes into quarters.
2. Place potatoes in a large pot and cover with water.
3. Bring to a boil over medium-high heat, reduce to a simmer and cook until fork tender, about 15 minutes.
4. Strain the water from the potatoes and rinse with cold water. Allow to cool.
5. Cook bacon in a frying pan until crispy. Chop into pieces.
6. Place the potatoes in a large mixing bowl, add mayo, caesar dressing, sour cream and mustard.
7. Mix until the potatoes are completely coated in dressing.
8. Add green onion, bacon and cheddar cheese.
9. Mix well and serve.
Recipe Substitutions:
- Use fresh chives or red onion instead of green.
- Red potatoes, russet potatoes or yellow potatoes may be used as well.
- Sharp cheddar cheese, mozzarella cheese or parmesan cheese would work too.
- Greek yogurt may be used in the place of sour cream.
- Ranch dressing may be substituted for ceasar.
Tips & Tricks:
- This makes a large portion of salad that is great for feeding a crowd. You can halve the recipe for smaller groups or small family dinners.
- Store potato salad in an airtight container or covered in plastic wrap in the fridge for up to 3 days.
- This can be served with warm potatoes and kept at room temperature for an hour or so.
- If the creamy dressing starts to bind, add 1 tsp apple cider vinegar or olive oil to the mix.
