Corn on the cob is synonymous with summer for me. It has always meant backyard barbecues, hot days, and long evenings.

That is, until I tried street corn.  Now it will definitely need to become a year-round dish!

While Mexican elote is traditionally grilled, giving the roasted corn a charred exterior that adds another dimension of flavor, the recipe I am sharing today calls for the corn cobs to be boiled. This makes it very simple to make at home and just as delicious.

The restaurant’s take on this popular Mexican street food is so good. The first time I tried it, I was blown away by this delicious treat.

Fresh summer corn is cooked and then slathered with a wonderfully creamy sauce. It takes corn on the cob to a whole new level. I knew I would have to learn how to make it at home.

Mexican Street Corn Recipe

Serve this easy street corn recipe with carne asada, white chicken chili, tacos, or any of your favorite Mexican recipes. It is the perfect side dish for any Mexican-inspired meal.

Make this corn the star of the show at your Cinco de Mayo party. You can even serve it up with burgers. Seriously, just add it to your next meal! The whole family is sure to love it.

Mexican Street Corn Recipe:

Ingredients:

  • 4 ears of corn, husk removed
  • ½ cup cotija cheese
  • 1/3 cup Mexican crema
  • 1/3 cup mayonnaise
  • 1 lime, juiced
  • 2 tbsp fresh cilantro, chopped
  • 1 tsp Tajin seasoning

Directions:

1. Bring a pot with water to boil. Boil the corn for about 5 minutes, or until tender.

2. In a small mixing bowl, add the Mexican crema, mayonnaise, and lime juice. Mix until well combined. Set aside.

3. Chop the cilantro and set aside.

4. When the corn is cooked, remove it from the pot, and let it cool off slightly.

5. Brush the Mexican crema and mayonnaise mixture over each corn cob.

6. Sprinkle the cotija cheese, Tajin seasoning, and cilantro over the corn.

Alternative Ingredients:

  • If you aren’t able to find Tajin, you can use any other brand of chili lime seasoning you wish.
  • You could also make your own chili lime flavoring using chili powder, sea salt, fresh lime juice, and a bit of lime zest.
  • Add some heat with hot sauce or cayenne pepper.
  • Sour cream can be substituted for the Mexican crema.
  • Try queso fresco, feta cheese, or parmesan cheese in place of the cotija cheese.
  • Fresh parsley can be used if you aren’t a fan of cilantro.
  • Try diced red onion or green onions.

Tips and Tricks:

  • Instead of boiling your fresh corn, grill it on the barbecue.
  • Turn this recipe into a Mexican corn salad. Just remove the corn kernels from the cobs, then mix the kernels together with the sauce and toppings in a large bowl. Serve it up with tortilla chips.

Ingredients
