Smoked Salmon Rice Bowls
Delicious smoked salmon rice bowls with fresh veggies, avocado, and a drizzle of teriyaki sauce. They are perfect for a quick, healthy, and flavorful meal anytime!
After another epic fishing trip on the West Coast this year, we came home with an abundance of salmon in our catch. One of the first things we decided to do was to smoke all of the Pinks we caught!
While pink salmon tends to be thought of as a lesser quality cut of fish, it is ideal for smoking.
Don’t have your own backyard smoker? No problem! Costco has some delicious smoked salmon that also happens to be affordable.

Today I want to share one of the recipes we have made with some of that smoked salmon. This sushi bowl recipe has all the flavors of your favorite sushi rolls, but takes a lot less work to make.
It is also a great recipe for meal prep. Cook up the rice and chop the veggies. You can then store each component separately or put your bowls together, ready to grab and go.

Tips and Tricks
- You can use any rice you like in this dish. I prefer the texture of a white rice, like sushi rice or jasmine rice, but you can also use brown rice. If you are watching your carb intake, try cauliflower rice or quinoa.
- Switch out the protein in these salmon bowls for shrimp, chicken, or beef.
- Add more vegetables and garnishes according to your taste. Some good options include edamame, pickled radishes, shredded cabbage, pickled ginger, black sesame seeds, crumbled nori, or furikake.
- Make your own spicy sriracha mayo at home. Simply combine regular mayonnaise and sriracha in a small bowl and stir well.
- Store any leftovers in an airtight container in the fridge for up to ** days.
