Smoked Salmon Rice Bowls

Delicious smoked salmon rice bowls with fresh veggies, avocado, and a drizzle of teriyaki sauce. Perfect for a quick, healthy, and flavorful meal anytime!

Ingredients

  • 6 oz smoked salmon
  • 1 cup white rice cooked
  • ½ long English cucumber cubed
  • ½ avocado diced
  • 1 carrot peeled and shredded
  • ½ cup cherry tomatoes halved
  • 1 green onion stalk diced
  • Spicy mayonnaise
  • Teriyaki or soy sauce
  • Bagel seasoning or sesame seeds

Instructions

  • Cook the rice according to package instructions. Divide the cooked rice evenly between two bowls.
  • While the rice is cooking, chop, dice, and prepare vegetables.
  • Cut smoked salmon into cubes.
  • Add equal amounts of the vegetables and smoked salmon cubes to each bowl.
  • Top with spicy mayo and/or teriyaki sauce.
  • Sprinkle with green onion and bagel seasoning if desired.

Notes

  • You can use any rice you like in this dish. I prefer the texture of a white rice, like sushi rice or jasmine rice, but you can also use brown rice. If you are watching your carb intake, try cauliflower rice or quinoa.
  • Switch out the protein in these salmon bowls for shrimp, chicken, or beef.
  • Add more vegetables and garnishes according to your taste. Some good options include edamame, pickled radishes, shredded cabbage, pickled ginger, black sesame seeds, crumbled nori, or furikake.
  • Make your own spicy sriracha mayo at home. Simply combine regular mayonnaise and sriracha in a small bowl and stir well.
  • Store any leftovers in an airtight container in the fridge for up to ** days.
