Using garlic herb compound butter is a great way to take your favorite steak to a whole new level. It elevates the natural flavors of a good cut of beef in a way that every steak lover will enjoy!
Whether you are cooking New York strip steaks, grilling beef tenderloin or making flat iron steak, this easy steak butter recipe will add amazing flavor to your dish.

Supplies:
- Meat Thermometer – we love this Meater instant-read thermometer.
- Small bowl – for mixing the butter compound.
- Plastic wrap – for storing the butter rub.
- Paper towels – for patting the steak dry.
- Sharp knife & cutting board – for chopping the herbs.
Ingredients:
- 1/4 cup unsalted butter, room temperature
- 2 Tbsp fresh chives, finely chopped*
- 1 tsp garlic powder
- 1/2 tsp salt
* green onion could be used instead. You may also choose to add parsley, oregano or minced garlic.
Preparation:
1. Chop fresh herbs finely.
A food processor may be used for this step but I find using a knife and cutting board easier so that the herbs don’t stick to the inside of a processor or cutting blade.
2. Place the soft butter into a small mixing bowl.
3. Add the herbs and spices to the butter.
4. Combine butter and herbs and mix well.
5. As each steak rests, add a dollop of the steak butter to the top of the steaks.
The end result is a perfectly cooked filet mignon that is next level delicious! Serve with a few of our favorite side dishes like this grilled corn salad, dill pickle pasta salad or skillet mushrooms recipe.
Recipe substitutions:
- Create a garlic herb butter by adding fresh garlic to the butter.
- Use olive oil instead of softened butter.
- Add lemon zest or lemon juice to the mixture.
- Use fresh parsley or herb of your choosing.
- Add black pepper or chili pepper for added kick.
- Dried herbs may be substituted for fresh ones.
Tips and tricks:
- Butter can be stored in an airtight container or bowl covered in plastic wrap for weeks in the fridge.
- Use this compound herb butter on everything from pork chops to chicken breast. It’s great for venison steaks too!
- This is a great make ahead recipe but is also totally easy to whip up while your steak is resting!
