One of my all time favorite cookies is the classic chocolate chip cookie. These easy chocolate chip cookie bars kick that cookie up about a dozen notches.
It’s full of rich brown sugar flavour with a mixture of semi sweet chocolate chips, chocolate chunks and white chocolate chips. This chocolate chip dessert recipe is a quick variation of one of our family favorites!
What are bar cookies?
These bars are most often made from a cookie dough batter that is pressed into a baking pan. Once baked and cooled they are cut into bars or squares for easy serving.

This chocolate chip cookie bar recipe is super easy to make and take to parties and events! These chewy cookie bars are chock full of milk chocolate goodness and the best thing to make for school lunches.
How to make these cookie bars:
Ingredients:
- 1 cup all purpose flour
- 1/2 tsp baking soda
- 1/3 cup salted butter, room temperature
- 1/2 cup brown sugar
- 1/4 cup granulated white sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup each semi sweet chocolate chips, milk chocolate chips, white chocolate chips and chopped chocolate chunks.
Tip: pre-made chocolate chip cookie dough mix can be used as a base for these bars as well. As a busy mom, I like to use short cuts like this when I’m in a hurry to make a quick treat.
Directions:
1. Preheat the oven to 350 degrees f.
2. Line the bottom of a square 8 inch x 8 inch non stick baking dish with parchment paper.
3. In a large bowl with a hand mixer or stand mixer with paddle attachment, combine dry ingredients. Add butter, egg and vanilla and mix until a soft dough forms.
4. Mix in all of the chocolate chips with a rubber spatula.
5. Transfer dough to the prepared baking pan and spread it evenly around the square baking pan.
6. Bake for 20-25 minutes until golden brown around the edges or until a toothpick inserted comes out clean.
Tip: slightly under bake the cookies for a soft and chewy center.
7. Move to a wire rack to completely cool.
8. Cut into 2 inch individual cookies for serving.
This great recipe makes 16 deliciously, chewy chocolate chip cookie bars. These chocolatey cookie bars are seriously a must make! I love how easy they are to make and bake.
How to store chocolate chip cookies:
Store these cookie bars in a large freezer bag or airtight container for a week at room temperature or in the freezer for up to three months.
These delicious cookie bars are full of great flavour and a chewy texture that is to die for. The trick is to under bake them just slightly so that they are the perfect balance of chewy bars and gooey cookies.
The secret to making the best chocolate chip cookie bars is lots of chocolate chips. Don’t be afraid to add more semi-sweet chocolate chips than the recipe calls for.
