What are beef short ribs?

Short ribs are a cut of meat taken from the rib area of beef cattle. They can be cut in a cross section in short portions of various thickness.

Growing up my mom served at a variety of Asian restaurants and I was lucky enough to be introduced to a wide variety of delicious Asian food. For special occasions I would always request a dinner full of Korean recipes.

Most of these recipes include ingredients that you can easily find in grocery stores. While a trip to Asian markets is not really needed, it’s always fun to explore and try new things found there.

I always try to have rice wine, low sodium soy sauce, minced ginger, garlic cloves and white rice in the kitchen pantry as my staples.

These Korean ribs make a great addition to an easy meal that the whole family will love! Serve them with stir-fried vegetables, cucumber salad or sauteed broccoli.

Supplies:

Korean Short Ribs Ingredients

Ingredients:

  • 12 beef short ribs (about 1lb), raw and defrosted
  • 3/4 cup soy sauce
  • 1/2 cup onion, diced
  • 8 cloves of garlic, minced
  • 1/4 cup brown sugar
  • 3 Tbsp white wine vinegar
  • 2 Tbsp fresh ginger, minced
  • 2 Tbsp sesame oil
  • 2 Tbsp white sugar
  • 1 Tbsp black pepper
  • Water
  • 1 stalk green onion, sliced for garnish
  • 1 Tbsp sesame seeds, for garnish

Directions:

1. In a medium bowl, combine the marinade ingredients (excluding water).

2. Pat the racks of ribs dry with paper towel and place them in a casserole dish.

3. Cover the ribs with the marinade.

4. Top with cold water so that the ribs are completely covered in marinade.

5. Cover the dish with plastic wrap and refrigerate for at least 4 hours, overnight is better.

6. Preheat the oven to 400 degrees F.

7. Prepare a cookie sheet and line it with aluminum foil or parchment paper.

8. Drain the marinade and place the ribs on the baking sheet in one layer.

9. Place the ribs in the oven and bake for 12-15 minutes.

10. Garnish with diced green onions and sesame seeds.

11. Serve with white rice or ramen noodles.

Rib cooking tips:

  • Be sure that the internal temperature of the ribs comes to 190 degrees F.
  • Cover leftover ribs in plastic wrap or place them in an airtight container to store in the fridge for a few days.
  • Use a meat thermometer is possible as a thin cut of beef will take less time to cook than a thick piece of meat.
  • These ribs can also be cooked over a charcoal grill or smoker.

Made these ribs for dinner and they were absolutely delicious! The only thing I did differently was after they had marinated for 6 hours, I dumped the ribs and marinade in my instant pot and cooked for 25 minutes then finished under the broiler. So tender and tasty. Will definitely make again.
