Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Slice entire onion very thinly. Use a mandolin if you have one.
Spread the cheese out evenly on the prepared baking sheet.
Layer the onion slices on top.
Drizzle with olive oil and sprinkle with seasoning if desired.
If going for the pizza version, add mozzarella and pepperoni slices to the top.
Bake in the oven for 35-45 minutes or until the cheese is golden and crispy.
