These zucchini brownies are absolutely delicious but the best part is that they are only one net carb per serving!

Ingredients

  • 1 cup zucchini finely grated (not drained)
  • 1/2 cup butter melted
  • 1 egg
  • 1 tsp vanilla
  • 1 cup almond flour
  • 1/3 cup unsweetened cocoa
  • 1/2 cup stevia
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup Lily's dark chocolate chips optional

Instructions

  • Combine first four ingredients in a medium bowl and mix well.
  • Add dry ingredients and combine until a cake-like batter is formed.
  • Pour batter into a parchment paper lined and/or greased 8x8 baking pan.
  • Bake at 350 for 35 minutes.
  • Allow to completely cool before cutting into squares.
