Spray the inside of the pie iron with non stick cooking spray.
Open the package of cookie dough, squeeze about 2 Tbsp of dough onto one side of the iron.
Press the dough down slightly and repeat with the other side of the iron.
Do not close the pie iron and cook, open faced, over the fire for approximately 12 minutes. Best when cooked slowly over a smouldering fire so as not to burn.
The cookies are done when they are slightly golden around the edges.
Allow the cookies to cool before removing from the iron.
