Low Carb Cream of Mushroom Soup Recipe

Ingredients

  • 1 Tbsp extra virgin olive oil
  • 2 celery stalks diced
  • ½ white onion diced
  • 2 cups 450g white mushrooms, diced
  • 8 cups beef broth or chicken broth
  • 2 cups heavy cream
  • 1 Tbsp fresh parsley chopped
  • Salt & pepper to taste

Instructions

  • Dice onion, celery and mushrooms.
  • Place in a medium pot with oil and saute until onion is opaque.
  • Add remaining ingredients to the pot and mix well.
  • Simmer for 20-30 minutes before seasoning with salt and pepper to taste.
  • serve with focaccia mug bread.
