1. Dice pepper, onion and ham. 2. Mix egg, cheese, salt & pepper. 3. Place ingredients into a large freezer bag for easy packing and storage. Tip: prepare the ingredients at home, in advance. This makes prepping and clean up a breeze when camping. 4. Line a dutch oven with parchment paper (this is optional but helps with clean up and serving later). 5. Layer tatertots on the bottom of the dutch oven. 6. Pour the egg mixture over the hash browns. 7. Place the lid on the dutch oven and bake for 60 minutes over the coals of a campfire or in an oven at 350 degrees. 8. Top with green onions before serving.
