Dutch Oven Breakfast Bake Recipe

A delicious dutch oven breakfast bake is the perfect recipe to serve the family for brunch. We love to make this while camping!

Ingredients

  • 2 cups Tatertot hash browns
  • 1 Bell pepper diced
  • ½ White onion diced
  • ½ cup Cooked ham diced
  • 8 Eggs
  • ½ cup Cheese shredded
  • 2 Green onion stalks diced
  • Salt & pepper

Instructions

  • Dice pepper, onion and ham.
  • Mix egg, cheese, salt & pepper.
  • Place ingredients into a large freezer bag for easy packing and storage.  Tip: prepare the ingredients at home, in advance.  This makes prepping and clean up a breeze when camping.
  • Line a dutch oven with parchment paper (this is optional but helps with clean up and serving later).
  • Layer tatertots on the bottom of the dutch oven.
  • Pour the egg mixture over the hash browns.
  • Place the lid on the dutch oven and bake for 60 minutes over the coals of a campfire or in an oven at 350 degrees.
  • Top with green onions before serving.
