Camping Quesadilla Recipe

Ingredients

  • 4 chicken breasts sliced
  • 2 tsp seasoning
  • 2 bell peppers sliced
  • 1/2 white onion sliced
  • 8 large tortillas
  • 2 cups cheddar cheese shredded
  • 1 Tbsp olive oil
  • Sour cream
  • Salsa

Instructions

  • 1. Prepare and package the vegetables and chicken at home if possible.
  • 2. Coat the skillet in olive oil and add the chicken.
  • 3. Cook over the grill or fire for ten minutes or until chicken is opaque. 
  • 4. Add vegetables and cook until al dente (about 10 mins).
  • 5. Next layer 1/2 cup of the filling mixture and 1/4 cup shredded cheese between two large tortillas and heat until the tortilla is toasted and the cheese is melted. 
  • 6. Slice the quesadilla into wedges.
  • 7. Serve with fresh salsa and sour cream.
