Camping Quesadilla Recipe

This camping quesadilla recipe is the most delicious meal to make while camping. With just a bit of preparation you can add this yummy recipe to your next trip.

Camping Quesadilla Recipe:

Ingredients:

  • 4 chicken breasts, sliced
  • 2 tsp seasoning
  • 2 bell peppers, sliced
  • 1/2 white onion, sliced
  • 8 large tortillas
  • 2 cups cheddar cheese, shredded
  • 1 Tbsp olive oil
  • Sour cream
  • Salsa

Directions:

1. Prepare and package the vegetables and chicken at home if possible.

2. Coat the skillet in olive oil and add the chicken.

3. Cook over the grill or fire for ten minutes or until chicken is opaque.

4. Add vegetables and cook until al dente (about 10 mins).

5. Next layer 1/2 cup of the filling mixture and 1/4 cup shredded cheese between two large tortillas and heat until the tortilla is toasted and the cheese is melted.

Tip: press the tortilla with the bottom of a second skillet to help it cook and crisp up.

6. Slice the quesadilla into wedges.

7. Serve with fresh salsa and sour cream.

We love to serve this with out homemade salsa but fresh salsa is even better! Prepare it at home in advance for easy clean up.
