This breakfast casserole recipe is full of flavourful pork sausage, eggs and cheese. It's seriously easy to put together, making it perfect for lazy Sunday mornings!

Ingredients

  • 375 g ground Italian sausage cooked
  • 10 large eggs
  • 1/2 cup milk
  • 1 1/2 cup diced hash brown potatoes
  • 1 cup Tex Mex cheese shredded
  • 1/2 tsp salt and black pepper
  • 1 green onion stalk diced

Instructions

  • 1. Cook the ground sausage in a large skillet on medium until cooked through. Set aside the brown sausage.
  • 2. Preheat the oven to 350 degrees f.
  • 3. In a large bowl, combine egg, milk and shredded cheese. Add seasoning of choice.
  • 4. Spray a large casserole dish with nonstick cooking spray. Layer the hash browns on the bottom of the dish.
  • 5. Layer the cooked sausage over the potatoes.
  • 6. Pour the egg mixture over the ingredients in the casserole dish.
  • 7. Bake for 45 minutes or until the center is firm and cooked through.
  • 8. Top with diced green onions and serve warm.
