375 g ground Italian sausage cooked 10 large eggs ½ cup milk 1 ½ cup diced hash brown potatoes 1 cup Tex Mex cheese shredded ½ tsp salt and black pepper 1 green onion stalk diced

1. Cook the ground sausage in a large skillet on medium until cooked through. Set aside the brown sausage.
2. Preheat the oven to 350 degrees f.
3. In a large bowl, combine egg, milk and shredded cheese. Add seasoning of choice.
4. Spray a large casserole dish with nonstick cooking spray. Layer the hash browns on the bottom of the dish.
5. Layer the cooked sausage over the potatoes.
6. Pour the egg mixture over the ingredients in the casserole dish.
7. Bake for 45 minutes or until the center is firm and cooked through.
8. Top with diced green onions and serve warm.
