No Bake Blackberry Cheesecake Recipe

Ingredients

  • 2 cups graham cracker crumbs
  • 1 tbsp butter
  • 8 oz cream cheese room temperature
  • 1/4 cup white chocolate chips
  • 1/4 cup + 1 tbsp heavy cream
  • 1 cup fresh blackberries + some for garnish
  • 2 tbsp powdered sugar
  • 3 tbsp lemon juice
  • 1 tsp vanilla extract
  • Fresh mint for garnish

Instructions

  • 1. Prepare all of the ingredients.
  • 2. In a small mixing bowl, combine crumbs with melted butter. It should look like wet sand.
  • 3. Pour equal amounts of the graham cracker mixture into 4 serving jars. Tamp down to create an even layer.
  • 4. In a microwave safe bowl, mix chocolate with a tablespoon of cream. 
  • 5. In the microwave, heating at 10 second intervals, melt the chocolate in the cream.
  • 6. Add cream cheese. Mix on high with an electric hand mixer or stand mixer with paddle attachment until smooth and creamy.
  • 7. Spoon the cream cheese mixture equally into the jars.
  • 8. Combine everything for the sauce in a small pan, bring to a boil over medium heat, stirring constantly.
  • 9. Remove from heat and allow the blackberry topping to cool before spooning equally into jars.
  • 10. Finally, in a medium mixing bowl, beat the remaining cream until stiff peaks form.  
  • 11. Top the jars with whipped cream and serve.
