No Bake Blackberry Cheesecake Recipe

Blackberry Cheesecake Recipe:

Ingredients:

  • 2 cups graham cracker crumbs
  • 1 tbsp butter
  • 8 oz cream cheese, room temperature
  • 1/4 cup white chocolate chips
  • 1/4 cup + 1 tbsp heavy cream
  • 1 cup fresh blackberries + some for garnish
  • 2 tbsp powdered sugar
  • 3 tbsp lemon juice
  • 1 tsp vanilla extract
  • Fresh mint, for garnish

Directions:

1. Prepare all of the ingredients.

2. In a small mixing bowl, combine crumbs with melted butter. It should look like wet sand.

3. Pour equal amounts of the graham cracker mixture into 4 serving jars. Tamp down to create an even layer.

4. In a microwave safe bowl, mix chocolate with a tablespoon of cream. 

5. In the microwave, heating at 10 second intervals, melt the chocolate in the cream.

6. Add cream cheese. Mix on high with an electric hand mixer or stand mixer with paddle attachment until smooth and creamy.

7. Spoon the cream cheese mixture equally into the jars.

8. Combine blackberries, sugar, lemon juice and vanilla in a small pan, bring to a boil over medium heat, stirring constantly.

9. Remove from heat and allow the blackberry topping to cool before spooning equally into jars.

10. Finally, in a medium mixing bowl, beat the remaining cream until stiff peaks form.  

11. Top the jars with whipped cream

Garnish this blackberry cheesecake with fresh mint leaves and blackberries to serve. This recipe makes four individual servings.

Tips and tricks:

  • If you’re a fan of blackberries, but not of the seeds, turn the sauce into a blackberry puree instead. Put the cooked blackberry filling into the bowl of a food processor and blend until smooth, then strain your puree to remove the seeds.
  • Putting together this delicious cheesecake ahead of time? Hold off on adding the whipped cream. Top the chilled cheesecake with the cream just before serving.
  • Turn this easy dessert into blackberry cheesecake bars. Create a blackberry swirl through the cheesecake batter.
  • Before serving, garnish the top of the cheesecake with fresh berries.
  • Any leftovers should be refrigerated and will last several days. Store them in an airtight container or wrap tightly in plastic wrap or aluminum foil.

  • For the sauce, substitute any fresh fruit your family likes best.
  • This recipe calls for a graham cracker crust, but you don’t have to use graham crackers. You can use digestive biscuits, vanilla wafers, even golden Oreos.
  • Try adding a little lemon zest to your cheesecake mixture.
  • Switch out the lemon juice in the filling for another kind of citrus juice, like lime or orange.
