Ingredients

  • 5 pound pork loin fat trimmed
  • ¼ cup dry rub
  • cup BBQ sauce

Instructions

  • 1. Trim excess fat from the pork loin roast.
  • 2. Pat dry with a paper towel.
  • 3. Cover the front and back of the pork in a solid layer of rub.
  • 4. Preheat the Traeger to 165 degrees F.
  • 5. Place the pork loin on the bottom grill grate, fat side down.
  • 6. Smoke for two hours.
  • 7. Wrap the whole pork roast in aluminum foil, creating a leak-proof packet.
  • 8. Smoke for an additional two hours. Remove from foil.
  • 9. Turn the Traeger up to 325 degrees F.
  • 10. During the last half an hour, baste the whole pork loin with BBQ sauce twice.
  • 11. Remove from the grill to a cutting board, let the pork rest for 10 minutes and cut into 1/2" slices.
