What is pork loin?
Sometimes called “the other white meat”, pork provides us with many different cuts of meat. Pork loin is a piece of pork that is taken from the back of the pig. This lean cut of meat is a great protein option when you’re tired of beef and chicken breast has gotten a little too pricey.

How to grill pork loin:
1. Trim excess fat from the pork loin roast.
2. Pat dry with a paper towel.
3. Cover the front and back of the pork in a solid layer of rub.
4. Preheat the Traeger to 165 degrees F.
5. Place the pork loin on the bottom grill grate, fat side down.
6. Smoke for two hours.
7. Wrap the whole pork roast in aluminum foil, creating a leak-proof packet.
8. Smoke for an additional two hours. Remove from foil.
9. Turn the Traeger up to 325 degrees F.
10. During the last half an hour, baste the whole pork loin with BBQ sauce twice.
11. Remove from the grill to a cutting board, let the pork rest for 10 minutes and cut into 1/2″ slices.
The pork loin is done when a meat thermometer inserted into the thickest part of the pork loin reads 160 degrees F.
Tips & tricks:
- Be sure to remove the silver skin from your meat before cooking.
- Easily turn this large cut of meat into boneless pork chops by cutting it into thick slices. They can then be frozen individually.
- Though a Traeger will give you the best results with this recipe, you can still use a charcoal grill or gas grill. Cook time may vary though. Always be sure the internal temperature reaches 160 degrees F.
- If you prefer marinades over dry rubs, in a small bowl, mix together olive oil or vegetable oil, lime juice and zest, black pepper, onion powder, garlic powder, a little maple syrup, and some chopped fresh herbs. Place pork in a resealable bag with the marinade for at least 1 hour before cooking.
How to store leftovers:
Leftover pork should be stored in the fridge, sealed in an airtight container. It makes excellent sandwiches the next day.
Use leftovers to make these delicious pulled pork sliders or easy pulled pork pizza!
What to serve with pork loin?
The possibilities for side dishes to serve with this pork recipe are endless. Roasted potatoes and root veggies would be delicious. Salads of all kinds work. I think applesauce always pairs well with pork. Really, any of your favourite sides will be perfect!
