Ingredients

  • 2 pounds white potatoes cut into quarters
  • 5 pieces of bacon cooked and diced
  • 1/2 cup mayonnaise
  • 1/2 cup caesar salad dressing
  • 1/2 cup 2 stalks green onion, diced
  • 1/4 cup cheddar cheese shredded
  • 3 Tbsp sour cream
  • 1 Tbsp brown mustard

Instructions

  • 1. Cut potatoes into quarters.
  • 2. Place potatoes in a large pot and cover with water.
  • 3. Bring to a boil over medium-high heat, reduce to a simmer and cook until fork tender, about 15 minutes.
  • 4. Strain the water from the potatoes and rinse with cold water. Allow to cool.
  • 5. Cook bacon in a frying pan until crispy. Chop into pieces.
  • 6. Place the potatoes in a large mixing bowl, add mayo, caesar dressing, sour cream and mustard.
  • 7. Mix until the potatoes are completely coated in dressing.
  • 8. Add green onion, bacon and cheddar cheese.
  • 9. Mix well and serve.
