Breakfast Crunch Wrap

Ingredients

  • 1 cup frozen hash browns
  • 4 breakfast sausages crumbled
  • 6 large eggs
  • ¾ cup mozzarella or cheddar cheese shredded
  • 4 10- inch flour tortilla
  • 3 Tbsp extra virgin olive oil

Instructions

  • In a large skillet add the frozen hash browns with 1 Tbsp olive oil. Cook on medium-low heat until browned on both sides then place in a small bowl and set aside.
  • Use the same pan and add the uncooked sausage pieces to it. Saute until cooked through.Then also place in a small bowl and set aside.
  • In another bowl whisk the eggs together with some salt and pepper. In a frying pan on medium heat, pour the eggs in and scramble eggs by stirring consistantly with a wooden spoon. This creates fluffy and evenly cooked scrambled eggs. Once they are done put in a bowl and set aside.
  • Set up an area to create the wraps. Place the tortilla on a clean surface. Add some of the scrambled eggs, then the sausage pieces, a bit of cheese and hashbrowns. 
  • Fold the tortilla from the bottom first and then around in a circle creating a pentagon shaped wrap. **watch the video to see how this is done!
  • Set aside and repeat with the rest of the tortillas and filling.
  • Heat a frying pan with 2 tablespoons of oil on medium heat. Place the tortilla folded side down in the frying pan and cook until golden brown (usually a minute or two). Flip the wrap and brown the other side as well. Once done, remove from the pan and repeat with the rest of the wraps, adding more oil for a nice crisp if necessary.
  • Top with hot sauce or pico de gallo for added kick.
