This breakfast tortilla wrap first came to my attention when the boys shared the tiktok tortilla hack that started it all.  The folded tortilla method is reminiscent of the crunch wrap that we love from Taco Bell.

So when the kids showed me this easy breakfast idea I simply knew that we would have to make it our own!  This is one breakfast recipe that the whole family loves!

The combination of scrambled eggs, sausage and cheese makes for the perfect hearty breakfast for our growing boys.  The beauty of this recipe is that it creates an ideal on the go breakfast in a single portable package of deliciousness.

This tortilla breakfast wrap can be made with a wide variety of different ingredients.  Simply substitute these yummy breakfast ingredients next time…

Ingredients suggestions:

  • Why not incorporate more bacon? Crispy bacon, canadian bacon or even bacon bits would be amazing!
  • A fried egg could be used instead of scrambled eggs.
  • Slices of cheese can easily be used in the place of shredded. 
  • The boys made a brisket breakfast burrito with leftovers from last night – highly recommend that!
  • Or add pulled pork instead of sausage?  Sure to be a winner with everyone!

Supplies:

Breakfast Crunch Wrap Ingredients

TikTok Breakfast Wrap:

Ingredients:

  • 1 cup frozen hash browns
  • 4 breakfast sausages, crumbled
  • 6 large eggs
  • ¾ cup mozzarella or cheddar cheese, shredded
  • 4 10-inch flour tortilla
  • 3 Tbsp extra virgin olive oil

Directions:

  1. In a large skillet add the frozen hash browns with 1 Tbsp olive oil. Cook on medium-low heat until browned on both sides then place in a small bowl and set aside.

2. Use the same pan and add the uncooked sausage pieces to it. Saute until cooked through.Then also place in a small bowl and set aside.

3. In another bowl whisk the eggs together with some salt and pepper. In a frying pan on medium heat, pour the eggs in and scramble eggs by stirring consistently with a wooden spoon. This creates fluffy and evenly cooked scrambled eggs. Once they are done put in a bowl and set aside.

4. Set up an area to create the wraps. Place the tortilla on a clean surface. Add some of the scrambled eggs, then the sausage pieces, a bit of cheese and hashbrowns.

5. Fold the tortilla from the bottom first and then around in a circle creating a pentagon shaped wrap. **watch the video to see how this is done!

6. Set aside and repeat with the rest of the tortillas and filling.

7. Heat a frying pan with 2 tablespoons of oil on medium heat. Place the tortilla folded side down in the frying pan and cook until golden brown (usually a minute or two). Flip the wrap and brown the other side as well. Once done, remove from the pan and repeat with the rest of the wraps, adding more oil for a nice crisp if necessary.

8. Top with hot sauce or pico de gallo for added kick.

Tips and tricks:

  • The larger the tortilla, the better in our opinion.  A large tortilla makes folding the ingredients in the center of the tortilla much easier!  Ingredients tend to fall out of smaller tortillas.
  • Create these ahead of time for easy grab and go breakfast.  Allow the tortilla to cool before covering it in plastic wrap and keep in the fridge or freezer.
  • Use a sandwich press to create delicious breakfast quesadillas instead.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
