Ingredients

  • 1 pound lean ground beef browned
  • 1 onion diced
  • 2 bell peppers diced
  • 1 28 oz can diced tomatoes
  • 2 Tbsp garlic minced
  • 8 cups beef stock We make stock from scratch as much as possible.
  • 2 Tbsp taco seasoning This homemade taco seasoning** is easy peasy and delicious!
  • 1 250 g pkg cream cheese room temperature
  • fresh cilantro for garnish

Instructions

  • Prepare and dice all of the vegetables.
  • In a large stock pot on medium heat, brown the ground beef. Add onion and garlic and cook until the onion is opaque.
  • Add the bell pepper, tomatoes, beef broth, and taco seasoning. Simmer for 10 minutes. Add the cream cheese and cook for an additional 10 minutes or until all of the cheese is well incorporated.
  • Top with fresh cilantro before serving.

Notes

Alternative ingredients:
  • Include kidney or black beans.
  • Instead of beef stock, use bone broth or chicken broth.
  • Substitute ground turkey or ground chicken for the ground beef.
  • Green chilies, salsa, and chili powder all add a little bit more heat.
  • For even more creaminess, add a splash or two of heavy cream.
  • Lime juice adds a wonderful tangy flavor to this soup.
  • Sliced green onions make another great topping.

  • Find low carb substitutions for your current favorite recipes, like using cauliflower instead of rice and radishes instead of potatoes.
  • Maintain a healthy balance of protein and fats. Sometimes it's hard to get enough fat and/or protein in a ketogenic diet, so be sure to include a balance of both in your dishes.
