We absolutely love tacos around here, who doesn’t?! So I went to work on creating a keto taco soup recipe that the whole family could enjoy. I seriously love adapting our family favorite recipes to be low carb and keto friendly.

Ingredients that you will need:
- 1 pound ground beef, browned
- 1 onion, diced
- 2 bell peppers, diced
- 1 28 oz can diced tomatoes
- 2 Tbsp garlic, minced
- 8 cups beef stock
- 2 Tbsp homemade taco seasoning
- 1 250g pkg cream cheese, room temperature
- fresh cilantro, for garnish
- Prepare and dice all of the vegetables.
2. In a large stock pot on medium heat, brown the ground beef. Add onion and garlic and cook until the onion is opaque.
3. Add the bell pepper, onion, tomatoes, beef broth and taco seasoning to a large pot. Simmer for 10 minutes. Add the remaining ingredients and cook for an additional ten minutes or until all of the cheese is well incorporated.
4. Top with fresh cilantro before serving in small bowls.
Serves 6 with about 5 net carbs per serving. It’s even better the next day and can be stored in an airtight container in the fridge for up to a week.
