Ingredients

  • 3/4 cup butter
  • 1 white onion diced
  • 4 celery stalks diced
  • 3 tsp poultry seasoning
  • 2-3 cups turkey stock
  • 2 eggs
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 Tbsp fresh parsley
  • 1/4 cup dried cranberries optional
  • 8 cups white unseasoned bread cubes

Instructions

  • Dice the celery and onion.
  • Heat a large skillet over medium heat and melt butter. Add celery and onion.  Saute until the onion is translucent.
  • Remove from heat and add poultry seasoning.  Mix well and allow to come to room temperature.
  • Spray the inside of the crockpot with non stick cooking spray.
  • Add dry bread cubes to the crock pot.
  • Top with 2 cups of broth, vegetable mixture, cranberries and remaining herbs.
  • In a small bowl, whisk the eggs.  
  • Add the beaten eggs to the crockpot. 
  • Mix everything together well.
  • Add additional chicken stock, if needed, to moisten all of the bread cubes.
  • Cook on low for 3 hours or high for 1 hour.
  • Check the bread mixture half way through the cook and add more stock if needed.
