Ingredients

  • 3 boneless skinless chicken breasts
  • 2 Tbsp extra virgin olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp chili pepper
  • 1 Tbsp lime juice
  • 2 Tbsp cilantro chopped
  • Lime wedges garnish

Instructions

  • Pat the chicken breasts dry with paper towels.
  • Cut each breast in half horizontally into two thinner cutlets. Alternately, place the chicken under a layer of plastic wrap and use a meat mallet to pound to an even thickness.
  • In a small bowl, combine 1 Tbsp of the oil and spices.
  • Coat both sides of the chicken breasts with the spice mixture.
  • Add the remaining oil to a large skillet.
  • Heat over medium-high heat until the oil starts to sizzle.
  • Place chicken cutlets in the hot skillet and cook until browned, about 5 minutes.
  • Flip and cook for an additional 3-5 minutes.
  • Top with fresh lime juice and cilantro.
