Strawberries & Cream Pudding Cookies

Ingredients

  • 3/4 cup unsalted butter room temperature
  • 1 cup granulated white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 2/3 cup all-purpose flour
  • 1 small box vanilla instant pudding mix 3.4 oz
  • 2 Tbsp freeze dried strawberries crushed to powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • Red food coloring optional

Instructions

  • Line a cookie sheet with parchment paper and preheat the oven to 350 degrees. F.
  • In a large mixing bowl combine the sugar and softened butter.
  • Add vanilla and egg.
  • Mix wet ingredients until well combined.
  • Add the dry ingredients to the large bowl and mix again. 
  • As an optional step, add a few drops of red food coloring into the bowl to increase the pink color of your cookie dough.
  • Mix in white chocolate chips to form a cookie dough.
  • Use a cookie scoop to drop the strawberry cookie dough onto the prepared baking tray.
  • Bake for 10 - 12 minutes.

Notes

2 tablespoons of strawberry Jello powder can be used instead of freeze dried strawberries.
