Carefully cut each ear of corn into quarters lengthwise.
Tip: Stand the corn upright and use a sharp knife—this takes a bit of muscle, so go slow!
In a large bowl, toss the corn strips with melted butter, olive oil, chili powder, garlic powder, paprika, salt, and pepper.
Place the corn ribs in a single layer in the air fryer basket.
(You may need to cook in batches depending on size.)
Air fry at 400°F for 10–12 minutes, flipping halfway through, until the corn is tender and
the edges are slightly crispy and curled.
While the corn cooks, mix together mayonnaise, sour cream, lime juice, and half of the parmesan cheese in a small bowl.
Remove the corn ribs and drizzle or brush with the creamy sauce.
Sprinkle with remaining parmesan, cilantro, and a dash of chili powder or Tajin.
Serve immediately while warm and watch them disappear.
