Ingredients

  • 4 ears of corn – husked and cleaned we like to use peaches and cream
  • 2 tbsp salted butter melted
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Toppings

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup parmesan cheese or cotija if you have it
  • 1 tbsp lime juice
  • ¼ cup fresh cilantro chopped – optional
  • Extra chili powder or Tajin – for garnish

Instructions

  • Carefully cut each ear of corn into quarters lengthwise.
  • Tip: Stand the corn upright and use a sharp knife—this takes a bit of muscle, so go slow!
  • In a large bowl, toss the corn strips with melted butter, olive oil, chili powder, garlic powder, paprika, salt, and pepper.
  • Place the corn ribs in a single layer in the air fryer basket.
  • (You may need to cook in batches depending on size.)
  • Air fry at 400°F for 10–12 minutes, flipping halfway through, until the corn is tender and
  • the edges are slightly crispy and curled.
  • While the corn cooks, mix together mayonnaise, sour cream, lime juice, and half of the parmesan cheese in a small bowl.
  • Remove the corn ribs and drizzle or brush with the creamy sauce.
  • Sprinkle with remaining parmesan, cilantro, and a dash of chili powder or Tajin.
  • Serve immediately while warm and watch them disappear.
