Preheat oven to 400 degrees. Prepare a large baking sheet with parchment paper.
Divide the pizza dough, using about ¼ of the dough to roll flat for the brim (circle) of the hat. Roll out the remaining pizza dough on a lightly floured surface into a rectangle shape.
Place shaped dough on parchment-lined baking sheet with the rectangle over the circle. Bake for about 5 minutes.
Remove pizza dough from oven and add sauce, mozzarella cheese, and pepperoni to create the stripes of the hat.
Return to oven and bake for an additional 5-7 minutes, depending on the thickness of your dough and desired doneness.

Use a pastry wheel to trim the dough for neater stripes and cleaner edges.
Let the dough warm slightly before rolling so it stretches without snapping back.
If you want a softer finish, cover the pizza loosely with foil for the last minute of baking.
Freeze leftover dough portions for quick lunches later.
Add cornmeal under the dough for extra crispiness and easier release from the pan.
