Ingredients

  • 4 boneless skinless chicken breasts cooked
  • 2 Tbsp taco seasoning
  • 4 cups instant white rice
  • 1 cup corn kernels
  • 1 cup black beans drained
  • 2 cups cherry tomatoes halved
  • 1 ripe avocado cubed
  • 2 cups pico de gallo or fresh salsa
  • 1 cup sour cream
  • fresh cilantro for garnish

Instructions

  • Cook the rice, set aside.
  • Meanwhile, in a medium bowl combine the chicken breast and taco seasoning.
  • Place a cast iron skillet on the stovetop and cook the chicken over medium high heat for 8-10 minutes.
  • Divide the rice, vegetables and chicken equally between four bowls.
  • Top with pico, sour cream, cilantro and enjoy!
