Instructions

  • Mix the peanut butter and butter together in a large mixing bowl.
  • Gradually stir in the sugar until combined well into a dough ball.
  • Cover with plastic wrap and refrigerate until ready to form balls (at least 15 minutes).
  • Shape into small balls (about 1-inch), place on a baking sheet, cover, and refrigerate for at least 20 minutes to allow to firm up again.
  • Melt chocolate in a microwave-safe bowl at 15 second intervals until smooth.
  • Dip peanut butter balls one at a time into melted chocolate, allowing excess chocolate to drip off.
  • Place on a parchment paper lined baking sheet, cover and refrigerate until ready to serve.

Notes

  • Try almond butter, or any of your favorite nut butters, instead of peanut butter.
  • If you like Almond Joy candy bars, mix condensed milk, desiccated coconut, and a splash of almond extract together, for a coconut center wrapped in chocolate.
  • Turn these tasty treats into energy balls by adding nuts, seeds, chopped dried fruit, etc., to the filling.
  • A small cookie scoop works perfectly for achieving a uniform size.
  • A food processor or hand mixer make this great recipe even easier to make.
  • I like these truffles best when they are still a bit cold, but they take on a smoother texture at room temperature.
  • Store in an airtight container in the fridge for a couple of days, if they last that long! If stacking, make sure to add a layer of wax paper in between.
