Chocolate Peanut Butter Ritz Cracker Cookies

Make these no-bake Ritz cracker cookies dipped in chocolate and filled with peanut butter. A sweet-salty Christmas treat everyone will love!

Ingredients

  • 48 Ritz crackers 180g Box
  • ½ cup smooth peanut butter
  • 10 oz chocolate melting wafers
  • 1-2 Tbsp Christmas sprinkles

Instructions

  • Line a baking sheet with parchment paper.
  • Lay out 24 Ritz crackers evenly on the cookie sheet.
  • Add 1 tsp of peanut butter to the top of each cracker.
  • Place another Ritz on top of the peanut butter, creating a sandwich.
  • Place chocolate wafers in a microwave safe bowl, heat at 30 second intervals, stirring in between until chocolate is completely melted.
  • Dip each Ritz sandwich into the melted chocolate, coating it completely.
  • Place each cookie on the parchment paper and dust with Christmas sprinkles before the chocolate begins to harden.

Notes

  • Chill the finished cookies in the fridge for 10–15 minutes to help the chocolate set quickly and cleanly.
  • Add a sprinkle of sea salt on top for an extra punch of salty-sweet deliciousness.
  • Swap the peanut butter for almond butter, cookie butter, or sunflower seed butter for allergies or flavour variety.
  • Use a fork to dip the sandwiches—this helps extra chocolate drip off easily.
