Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups brown sugar
  • 1 Tbsp vanilla extract
  • 3 cups grated zucchini
  • 3 cups all-purpose flour
  • 3 tbsp cocoa powder
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350 degrees F.
  • Line two bread loaf pans with parchment paper or spray with non-stick cooking spray.
  • Beat eggs in a large bowl, mix in vegetable oil, sugar, vanilla extract, and zucchini until well combined.
  • Whisk flour, cocoa powder, salt, baking soda, and baking powder together in a medium bowl.
  • Stir the dry ingredients into the wet ingredients mixture.
  • Mix in chocolate chips.
  • Pour the batter equally into the two loaf pans.
  • Bake in the oven until a toothpick inserted into the centre of the loaves comes out clean, about 50 minutes.
  • Let cool for 10 minutes before removing from the pans to finish cooling on a wire rack.
