Ingredients

  • ¾ cup vanilla Premier Protein shake
  • ¾ cup coconut milk
  • 1 Tbsp instant cheesecake pudding mix
  • 1 tsp vanilla extract
  • 2 Tbsp toasted coconut
  • 1 Tbsp graham cracker crumbs

Instructions

  • Combine protein shake, coconut milk, pudding mix, and vanilla extract in the Ninja Creami pint container. Stir well.
  • Freeze the pint container on a flat, level surface for 24 hours or until frozen solid.
  • Run the frozen pint under hot water for 30 seconds to loosen the sides. Remove the lid and place the container into the outer bowl of the Ninja Creami.
  • Secure the outer bowl lid, insert it into the Ninja Creami ice cream maker, and press the Lite Ice Cream button. Let the cycle complete.
  • Check the texture; if powdery, use the Re-spin function for a smoother consistency.
  • Meanwhile, toast the coconut in the oven on low broil for 2-5 minutes if needed. Watch carefully so that it doesn’t burn. Allow to cool.
  • Create a hole in the center of the ice cream and add the toasted coconut and graham cracker crumbs. Use the Mix-In button to evenly distribute.
  • Top with more coconut and enjoy!

Notes

  • Want ultra-creamy ice cream? Add ½ teaspoon xanthan gum before freezing to maintain texture. This can be substituted for the pudding mix.
  • Chop mix-ins into small pieces so they distribute evenly and blend smoothly.
  • Place the pint on a flat surface in your freezer to prevent freezing at an angle.
  • If the ice cream is too hard, use the Re-spin function for a softer consistency.
  • Let the frozen pint sit at room temperature for 10-15 minutes or run under hot water for 30 seconds before spinning to prevent icy chunks.
  • If a dome forms on top while freezing, try freezing without the lid or scrape off any excess before spinning to protect your blades.
  • If you're looking to reduce sugar content, consider using natural sweeteners like honey, maple syrup, or agave syrup for a different flavor profile.
