Line a baking sheet with parchment paper.
In a medium mixing bowl, cream together butter and sugar.
Add egg and vanilla extract to the mixture.
Use a hand blender or food processor to blend the cottage cheese until it is smooth.
Add cottage cheese to the rest of the wet ingredients.
Add remaining dry ingredients and mix until a soft dough forms.
Fold in chocolate chips.
Preheat the oven to 350 degrees F.
Use a cookie scoop to drop balls of dough onto your prepared baking sheet.
Bake for 10-12 minutes or until the edges of the cookies start to brown.
Place on a wire rack to cool.
