Ingredients

  • ¼ cup butter softened
  • cup brown sugar
  • 1 large egg
  • ½ cup 2% cottage cheese
  • 1 tsp pure vanilla extract
  • 1 ¼ cup almond flour
  • 1 tsp baking powder
  • ½ cup chocolate chips

Instructions

  • Line a baking sheet with parchment paper.
  • In a medium mixing bowl, cream together butter and sugar.
  • Add egg and vanilla extract to the mixture.
  • Use a hand blender or food processor to blend the cottage cheese until it is smooth.
  • Add cottage cheese to the rest of the wet ingredients.
  • Add remaining dry ingredients and mix until a soft dough forms.
  • Fold in chocolate chips.
  • Preheat the oven to 350 degrees F.
  • Use a cookie scoop to drop balls of dough onto your prepared baking sheet.
  • Bake for 10-12 minutes or until the edges of the cookies start to brown.
  • Place on a wire rack to cool.
