Add the white chocolate bark, white chocolate chips, pistachios, cranberries and coconut oil to the crockpot.
Set to cook on low for 1 hour, stirring at the half an hour mark.
When the chocolate is completely melted, stir once again to coat the pistachios and cranberries in chocolate.
Place muffin cup liners on a baking sheet.
Use the cookie scoop to drop the candy mixture into the liners.
Top candy clusters with extra pistachios and cranberries if desired.
Move them to the refrigerator to set for about an hour.
