Easter Sugar Cookie Bar Recipe

Easter Mini Egg Cookie Bars - super easy to make and totally delicious, these bars are the perfect Easter dessert or treat!

Ingredients

  • 2 cups all purpose flour
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup butter softened
  • 1 teaspoon vanilla extract
  • 1 tsp baking soda
  • ½ teaspoon salt
  • 1 cup Cadbury mini eggs
  • ½ cup semi sweet chocolate chips

Instructions

  • Preheat the oven to 350 degrees f.
  • Line the bottom of a square 8 inch x 8 inch non stick baking pan with parchment paper.
  • In a large bowl or stand mixer, combine dry ingredients. Add butter, egg and vanilla and mix until a soft dough forms.
  • Roughly chop up the mini eggs into a third of the size. Reserve a few eggs for the top of the bar.
  • Add the mini eggs and chocolate chips to the dough.
  • Spread the dough evenly into the baking pan. Press the reserved chocolate eggs into the top of the bar.
  • Bake for 15-20 minutes or until a toothpick inserted comes out clean. Allow to completely cool.
  • Cut into 2 inch bars for serving.
