Ingredients

  • 4 cups white rice
  • 1 lb lean ground beef
  • 2 cups romaine lettuce chopped
  • 1 large ear of corn cooked and cut
  • 1 cup black beans drained
  • 2 cups cherry tomatoes halved
  • 1 cup fresh pico de gallo
  • 1 cup cheddar cheese shredded
  • 4 Tbsp guacamole
  • 4 Tbsp sour cream
  • Fresh cilantro finely chopped
  • Jalapeno sliced

Instructions

  • Prepare and cook rice, set aside.
  • Meanwhile, cook the beef. Simply cook the beef in a skillet over medium heat. Stir in the taco seasoning and set aside.
  • Dice and shred all of the vegetables.
  • Divide the lettuce and rice into 4 bowls and top with equal portions of the vegetables.
  • Add the beef mixture.
  • Top with salsa, guacamole and sour cream.
