In the bowl of your stand mixer, combine warm water, honey and yeast.
Whisk, cover and let it sit for 10 minutes until foamy.
Add melted butter, salt and 4 cups of flour.
Mix on low speed using the dough hook attachment. Add the 5th cup of flour if the dough feels too sticky.
Transfer dough to a lightly floured surface and knead into a smooth ball.
Place dough in a large bowl greased with olive oil. Cover with plastic wrap and let it rise in a warm place for an hour.
Punch down the dough, split in half, roll into rectangles, and place each in a greased bread pan.
Brush tops with olive oil, sprinkle Everything Bagel Seasoning and let them rise for another hour.
Bake at 350°F for 15-20 minutes until golden brown.
Transfer loaves to a cooling rack, slice and enjoy!
